Hot Griddled Christmas Scones 225 g Self-raising flour
50 g Butter
1 Pinches salt
50 g Caster sugar
50 g Sultanas finely chopped; (50 to 75)
1 Egg; beaten with a little milk
25 g Finely chopped red and green glace cherries
1 Pinches cinnamon
Sift the flour and salt in a bowl and rub the butter in to make a
fine crumb. Stir in the sugar, fruit and cinnamon. Add the egg and
milk and mix to a soft dough.
Turn out onto a floured board and dust with flour. Roll out to 1/2"
thickness and cut into 8-10 rounds with a pastry cutter. Add some
butter to a griddle pan and fry the scones in two batches for five
minutes, turning once.
